‘Kinkajou’ is the first lot of the year from Sumava de Lourdes, but it is not the first time Pilot has seen the exceptional processing skills of this farm owner on display.
After processing both of our Limited Edition Ruva ‘Geisha’ coffees, award-winning Producer Francisco Mena returns with a black honey process Caturra from the West Valley. Black honey is a very difficult, labour intensive and time consuming processing method. It also happens to be Francisco's favourite. By depulping, keeping the mucilage intact and slowly drying on raised beds, this coffee has developed immensely sweet and robust flavours.
Although ‘Kinkajou’ in this case refers to the lot name, it is also the name of a tree-dwelling mammal that is native to the area, coincidentally known as the ‘honey bear.’ A charming reference to Sumava’s lush tropical climate and shared affinity for the sweeter things in life.
